Here’s What I Eat in a Day…30 Weeks Pregnant!

I’m on the Specific Carbohydrate Diet, which has kept my ulcerative colitis in remission for 15 years!

I have no gestational diabetes, and I have felt AMAZING this entire pregnancy! Not ONE DAY of morning sickness! Feeling so grateful!

Everything I eat has major nutritional benefits for both me and baby: protein, iron, calcium, choline, fiber, healthy fats, etc!

Breakfast:
Cheesy scrambled eggs
Dates & cashews
Brazil nuts (daily source of selenium)

Workout:
20 min yoga
1 hr power walk

Lunch:
Tropical Banana “Ice Cream”
Banana/Honey “Cookie Dough” (PB and honey and vanilla extract — fridge for 15 minutes)

Snack:
Carrots & 1 full avocado
Dates & Cashews
Green grapes

Dinner:
“Better than @sweetgreen “ Power Bowl

8 oz salmon

Cauliflower rice

Roasted beets

Romaine lettuce

Homemade Pesto

Recipes:

Cheesy Scramblers:

2 eggs + 4 slices of cheese + spinach

Tropical Banana Ice Cream:

1/2 cup frozen strawberries
1/2 cup frozen mango
1 cup frozen pineapple
1/3 cup frozen blueberries
1 or 2 frozen bananas
2-3 Tbsp almond butter
1/3 cup almond milk, or milk of choice
1.5 tsp cinnamon
1 Tbsp honey (or 10 drops french vanilla stevia)

“Better than Sweetgreen” Power Bowl:

1/2 cup cooked wild rice OR [SCD:] 1 cup cooked cauliflower rice
1/3 cup cooked ground turkey (OR a salmon filet, or ground beef, or diced chicken breast)
— cooked in 1/4 red onion, 2 garlic cloves, 3 Tbsp EVOO, salt and pepper
1/3 cup roasted beets, chopped (or roasted brussels sprouts/red onions)
— Roasted with 3 Tbsp EVOO, garlic powder, onion powder, salt and pepper
1/2 cup chopped romaine lettuce
4 Tbsp fresh pesto
–– 2 cups fresh basil, 2 garlic cloves, squeeze of lemon, 1/3 cup pine nuts, 1/3 cup parmesan cheese, 1/3 cup EVOO, salt and pepper
