Los Jilbertos Mexican restaurant failed a health inspection earlier this week, according to Mesa County Public Health. The restaurant has re-opened.

The restaurant, located at 2812 North Ave., was closed after failing a health inspection Tuesday and passed a re-opening inspection Wednesday.

A number of issues were identified during the initial inspection, including not having a certified food protection manager on-site and issues with hand-washing.

“Observed numerous employees fail to wash their hands when it is required,” the inspection report stated. “Observed a gloved employee working the cook station crack raw eggs. The employee then proceeded to handle tortillas and burrito wrappers without changing gloves and washing hands. Additionally, an ungloved employee was observed cutting raw chicken. That employee then touched a pan handle, cooking utensil, and other clean surfaces without washing hands. Inspector asked both employees to wash their hands. One employee was observed washing their hands for less than 10 seconds.”

There was also a lack of signage telling employees to wash hands, according to the report.

There were also issues with dish-washing, according to the report.

“Observed a food employee rinse a board used to cut raw chicken but not sanitize it,” the report stated. “Additionally, lids used to cover foods were observed only being rinsed before being placed on a rack to dry. Additionally, per operator, their pieces of their meat slicer that must be cleaned in place are only washed. When cleaned, food contact surfaces must be washed, rinsed, and sanitized. Education provided to operator on how to wash rinse and sanitize food contact surfaces properly.”

The inspection also reported raw chicken being thawed in a bucket of hot water on the floor.

“Per operator, when they need raw meat thawed fast, this is the method of doing so,” the report stated.
